Energy Balls

 

Ingredients

  • 12 dates

  • 8 dried figs

  • 12 dried apricots

  • Half cup cashews

  • Half cup almonds

  • Half cup walnuts

  • Dried coconut (add only if you like)

  • Poppy seeds (add only if you like)

  • Sesame Seeds (add only if you like)

Prep Time: 30 minutes

 

Steps

  • Start by roasting the almonds and cashews on a medium flame for 3-4 minutes

  • Microwave the nuts for 1 minute to dry roast and let them cool

  • Roast seeds for about 3-5 minutes or until you get the aroma

  • Heat 7 dates, 6 apricots, and 4 figs in a pan for 2-3 minutes on low flame and after cooling, blender all these and keep it on until the texture changes

  • Add half cup walnuts, cashews and almonds to the mix

  • Now knead the mixture well – it shouldn’t be too tight or too loose

  • Divide the mix into 12-15 equal portion

  • Now roll each portion into balls

  • Optional - for the garnish, roll up the balls on dried coconut powder or sesame seeds

 

Servings

About 12-15 balls. Do remember to store in a food grade airtight jar.

RECIPES

        Wholesome Roll

 

Ingredients

  • Half cup fresh grated dry coconut

  • Half cup dry dates

  • Half cup milk

  • ¼ cup unsalted pistachios

  • ¼ cup Raisins

  • ¼ cup sugar

  • 2-3 almonds

  • 2-3 cashew nuts

  • ¼ teaspoon green cardamom powder

  • 1 teaspoon desi ghee

Prep Time: 10-15 minutes

Steps

  • Roast the fresh coconut on a non-stick frying pan for 2 minutes on medium flame. Turn off the stove and pour the ghee on pan and roast the cashew nuts and almonds nuts

  • Add pistachios after roasting and remove from the pan

  • Pour milk & sugar in the pan and stir on low flame for 2 minutes

  • Add the cardamom powder once the sugar is dissolved

  • Once its boiled softly, add roasted nuts, dates and raisins, to the mixture

  • Keep cooking the nuts on low flame, stir gently

  • Once milk starts to thicken, add coconut powder and cook until the mixture is thick

  • Add ghee (optional) for flavour, turn off the stove

  • Once the mixture is completely cooled, shape it into rolls

Serves between 2 to 5 people

Ingredients

  • ¼ cup pistachio

  • 5 almonds

  • 5 cashew nuts

  • 1-2 dried figs

  • 1-2 chopped dates

  • ¼ teaspoon cardamom powder

  • 1.5 cup milk

 

Prep Time: 30 minutes (but worth spending every minute)

Steps

  • Soak the pistachio, almonds, cashew nuts, dried figs in water for about 30 minutes.

  • Peel off the almond skin and drain water,

  • Blend all the above nuts and dry fruits

  • Mix chopped dates and cardamom powder

  • Add milk and blend until texture is smooth

  • Continue to add more milk and blend

  • Garnish using chopped nuts and 1 teaspoon chocolate syrup (optional)
